Mom, There's Nothing to Eat!

Hungry? Can't find anything good to eat? Here are 6 super easy (I promise) meals to make: Using 5 Ingredients or Less. Like, seriously.

Me (to my 15yo daughter): What can I write about about today? I don't think my students are reading my journal & I want to post something fun and interesting.

My 15 yr. old: Food.

Me: Yes, FOOD. Everyone loves to eat.

Being in quarantine is even less fun when there's NOTHING TO EAT. So I came up with 6 fast & simple things that you can make right now, using only 5 ingredients or less.

So I just made this. --------->>>>

French "I'm So Bored" Bread Pizza

Pro Tip: Line a baking sheet with aluminum (tin) foil first = less clean up.


- loaf of French bread (cut in half)

- spaghetti or pizza sauce

- leftover veggies

- any kind of cheese

For mine (photo, above right), I chopped up green peppers & some red onion and topped it with grated parmesean cheese. But you can use anything in your fridge. Bake at 400 for 10 mins. BOOM. Done & yum. (Why do they call it "red onion" when it's clearly PURPLE?)

Melty Grilled "Quarantine" Cheese & Whatever Sandwich

- 2 slices of bread

- Any kind of cheese

- Leftovers of whatever you like: sliced ham, sliced tomatoes, or sliced avocado

That's it! Just like a regular grilled cheese sandwich except even yummier.

Things you can add: bacon, a fried egg, deli meat, sliced avocado, onions or tomatoes.

Chocolate "I Can't Go Outside" Mug Cake

(Yes, cake because I know how much all of you LOVE to eat cake. And only 3 ingredients.)

- 1 very ripe banana

- 1 egg

- 2-3 tbsp. cocoa powder

Mix all 3 ingredients in a blender or food processor. (Banana should be very ripe.) Mix until a batter is formed. Pour into a greased coffee mug. Cook in microwave for 1 min. or LESS. Do NOT overcook or you will burn it! Don't forget to clean up after yourself!

Cheesey Garlic "I Miss School" Spaghetti

(What's easier than boiling water for some pasta? Literally nothing.)

- 8 oz. spaghetti (or other pasta)

- Olive oil or butter

- Garlic (minced or powder)

- 2 oz. parmesan (or mozzerella) cheese

Boil pasta. Drain well. Toss in olive oil or butter. Add fresh minced garlic (or a sprinkle of garlic powder). Toss well. Toss with (or top) with parmesan or mozzerella cheese.

Breakfast "Why is This Happening?" Waffle Sandwich

(Most everyone has frozen waffles in their freezer. Right?)

- 2 waffles, toasted

- Whatever: apple slices & peanut butter

- Or: Nutella & strawberry jam

Toast 2 frozen waffles (or use sliced bread) in a regular toaster. Spread with whatever you have: banana slices & peanut butter -OR- apples slices & honey -OR- deli turkey slices & cheese -OR- Nutella & fresh slices strawberries. Get creative. Eat like a regular sandwich.

Scrambled Egg "Why Can't I See My Friends" Surprise

- 2-3 eggs

- Butter or non-stick spray

- Leftovers from your fridge

Heat skillet on medium-low. Melt butter in skillet or coat with non-stick spray. Pro Tip: In a bowl, beat eggs & 1 tsp. of butter together w. a fork BEFORE putting them in skillet. Scramble eggs like normal. Toss in any leftovers from your fridge: cooked veggies, spinach, crumbled bacon, cheese, sliced black olives, chopped tomato & avocado. Be creative.

Extra Credit (EC) Assignment: You might think only bad things going on in the world right now, BUT there are a lot of GOOD things happening, too. EC Assignment: Compile a list of 10 things that are GOOD right now. You must include the reason WHY each one is good.

For example: "Being in quarantine has allowed me to spend a lot of time with my daughter, Maddy. Before COVID-19, I was working 2 jobs (70 hrs. per week) and I was never around. But now that we're forced to stay home, I get to see my daughters more & we are really bonding. We talk more & have meaningful conversations. I also enjoy being around our pets (our cats & dog, Lucy). Being around my daughters and our pets calms me & makes me feel happy. I'm so grateful for this time we are all able to be together." - Ms. D.

Extra Credit Assignment: Submit your most meaningful journal entry.
